Personality:
The general first impression anyone gets of Alfred is that he is a Very Anxious Young Man, probably ill-suited to the profession of vampire hunting. His anxiety is evident in every terrified expression that crosses his face as he follows his mentor, Professor Abronsius, around - easily cowed by the older man, and also by just about everyone he encounters, be they innkeeper, vampire, or lady. His naïve demeanor (he runs back into a house when Sarah asks him to get her washing sponge for her journey, giving her the chance to run away alone), neatly-kept boyish appearance, and timid speech betray a sheltered sort of upbringing, and one that more than certainly has him instantly relating to Sarah, a young woman who has effectively been hidden away in her home by her family. While he's incredibly well-meaning throughout his canon, his efforts are nearly always bumbling, whether by bad luck, being at the wrong place at the wrong time, or just not realizing he's walking into trouble.
He tries his hardest to keep up as the Professor's loyal "inventive and attentive but resistant assistant", who, despite being objectively pretty awful to him, is really the only support system he has had for some time. He follows along with everything he tries to do, from the very beginning of the show even trekking out to find him in the snow and carrying his frozen body into town to thaw out. He doesn't always agree with what the Professor asks him to do, but he does it anyway, because he is The Good Student and plainly the older man knows what is best.
Even though he's the sole assistant to a scholar who hunts vampires for a living, he can't stand the idea of actually killing one; twice in canon he is on top of a vulnerable vampire with hammer and stake, and both times he just can't do it, preferring the idea of escaping the castle peacefully rather than having to really hurt anyone - even if it's going to make everything that much harder for him in the long run. This hesitance is often mistaken for a lack of expertise, but it's clear that he does pay attention and is quite studious on the matter, even going so far as to cite names and theories when presented with evidence after having a run in with the Count's son.
Alfred, for as much as he is put-upon, is still a romantic, deeply passionate young man. He is easily attracted to beautiful women (and men, he comes to realize almost immediately upon arrival to the castle), and when he meets Sarah he is immediately smitten, putting his all into helping her the moment he is asked. He is a very sweet person, caring and concerned with those around him, but unfortunately that does lend itself to the tendency to be easily manipulated with a couple well-placed tugs on his heartstrings. If he likes you, he will be easily coerced to give up the hot bath he has just run after a hard day so you can take it - or run through a haunted forest to a vampire's castle for the sake of trying to get you out. He may be afraid, but he does try his best to see the best in people instead of assuming the worst...but getting your ideas of romance from only books leads to a man easily misled.
That sweet, puppy-like devotion isn't without a basis in lust, mind you - he's been known to try and steal peeks through keyholes like the sheltered schoolboy he is, and in his darkest dreams (which are literally a dream ballet in canon), he is very much the hunter and not the prey. The Count saw this in him immediately, acknowledging from beginning to end that his soul belongs with the vampires...even if he can't quite yet see it in himself.
